  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1/4 cup lemon juice (freshly squeezed)
  • 1/2 cup buttermilk

For the Lemon Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice (freshly squeezed)
  • 1-2 tablespoons heavy cream (adjust for desired consistency)


  1. Preheat Oven and Prepare Pan:
  • Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
  1. Dry Ingredients:
  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  1. Cream Butter and Sugar:
  • In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  1. Add Eggs and Flavorings:
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract and lemon zest.
  1. Combine With Dry Ingredients:
  • Alternately add the dry ingredients and buttermilk to the butter mixture, starting and ending with the dry ingredients. Stir in the lemon juice until just combined.
  1. Bake:
  • Fill each cupcake liner about 2/3 full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  1. Cool:
  • Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  1. Prepare Lemon Frosting:
  • Beat the softened butter until smooth.
  • Gradually add powdered sugar, lemon zest, and lemon juice, beating until creamy.
  • Adjust the consistency with heavy cream, beating until smooth and spreadable.
  1. Decorate:
  • Frost the cooled cupcakes with the lemon frosting using a piping bag or a knife.
  • Optionally, garnish with a small slice of lemon or additional lemon zest for decoration.
