Eggless Mango No-Bake Cheesecake

For the crust:

  • 1 and 1/2 cups crushed graham crackers or digestive biscuits
  • 1/4 cup melted butter

For the filling:

  • 2 cups mango pulp (fresh or canned)
  • 1 and 1/2 cups cream cheese, softened
  • 1 cup heavy cream, chilled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • Sliced mangoes, for garnish (optional)


  1. Prepare the crust:
  • In a bowl, mix together the crushed graham crackers or digestive biscuits with melted butter until well combined.
  • Press the mixture evenly into the bottom of a 9-inch springform pan. Place in the refrigerator to chill while you prepare the filling.
  1. Prepare the filling:
  • In a small bowl, sprinkle gelatin over water and let it bloom for 5-10 minutes.
  • In a separate bowl, beat the cream cheese until smooth and creamy.
  • Add mango pulp, powdered sugar, and vanilla extract to the cream cheese and mix until well combined.
  • In another bowl, whip the chilled heavy cream until stiff peaks form.
  • Microwave the bloomed gelatin for about 10-15 seconds or until completely dissolved.
  • Gradually add the dissolved gelatin to the mango and cream cheese mixture, stirring continuously.
  • Gently fold in the whipped cream until the mixture is smooth and well combined.
  1. Assemble the cheesecake:
  • Pour the mango cheesecake mixture over the prepared crust in the springform pan.
  • Smooth the top with a spatula.
  • Cover the pan with plastic wrap and refrigerate for at least 4 hours or until set.
  1. Serve:
  • Once set, remove the cheesecake from the springform pan and transfer it to a serving plate.
  • Garnish with sliced mangoes, if desired.
