Eggless Mango No-Bake Cheesecake

Ingredients:

- 1 and 1/2 cups crushed graham crackers or digestive biscuits
- 1/4 cup melted butter

- 2 cups mango pulp (fresh or canned)
- 1 and 1/2 cups cream cheese, softened
- 1 cup heavy cream, chilled
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin powder
- 2 tablespoons water
- Sliced mangoes, for garnish (optional)
Instructions:
- Prepare the crust:
- In a bowl, mix together the crushed graham crackers or digestive biscuits with melted butter until well combined.
- Press the mixture evenly into the bottom of a 9-inch springform pan. Place in the refrigerator to chill while you prepare the filling.
- Prepare the filling:
- In a small bowl, sprinkle gelatin over water and let it bloom for 5-10 minutes.
- In a separate bowl, beat the cream cheese until smooth and creamy.
- Add mango pulp, powdered sugar, and vanilla extract to the cream cheese and mix until well combined.
- In another bowl, whip the chilled heavy cream until stiff peaks form.
- Microwave the bloomed gelatin for about 10-15 seconds or until completely dissolved.
- Gradually add the dissolved gelatin to the mango and cream cheese mixture, stirring continuously.
- Gently fold in the whipped cream until the mixture is smooth and well combined.
- Assemble the cheesecake:
- Pour the mango cheesecake mixture over the prepared crust in the springform pan.
- Smooth the top with a spatula.
- Cover the pan with plastic wrap and refrigerate for at least 4 hours or until set.
- Serve:
- Once set, remove the cheesecake from the springform pan and transfer it to a serving plate.
- Garnish with sliced mangoes, if desired.
