Red Velvet Cupcakes are a timeless classic, beloved for their striking crimson hue, velvety texture, and irresistible flavor. These miniature marvels are a delightful fusion of subtle cocoa undertones, tangy buttermilk, and a hint of vanilla, all wrapped in a moist, tender crumb.

Ingredients for cupcake:

  • 135g Cake Flour ( 125 grams All purpose flour +10 grams Cornflour)
  • 130g granulated sugar
  • 50g Vegetable oil
  • 1/2 cup (120ml) milk
  • 190g butter milk (185 grams milk mixed with 1 tsp white vinegar, let sit for 5 minutes)
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 tablespoon Red food coloring (as needed depending on the colour)

Ingredients for the Cream Cheese Frosting:

  • 125g cream cheese, softened
  • 50g unsalted butter, softened
  • 100g powdered sugar
  • 1/2 teaspoon vanilla extract

Method for Baking Cup Cake:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.
  2. In a mixing bowl, sift together the all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the buttermilk, vegetable oil, red food coloring, vanilla extract, and vinegar until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the cupcake liners, filling each liner about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes are cooling, prepare the cream cheese frosting. 

Method for Cream Cheese Frosting:

  1. In a mixing bowl, beat together the softened butter and cream cheese until smooth and creamy.
  2. Gradually add the sifted powdered sugar, and continue beating until the frosting is smooth and fluffy. Add the vanilla extract and mix until well combined.

Red Velvet Cupcake Frosting and and Garnishing :

  1. Once the cupcakes are completely cooled, frost them with the cream cheese frosting using a piping bag or offset spatula.
  2. Optionally, you can garnish the cupcakes with sprinkles, grated chocolate, or red velvet cake crumbs.
  3. Serve and enjoy your delicious eggless red velvet cupcakes!
