Carrot Walnut Cake with Cream Cheese Frosting Recipe


For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 4 large eggs
  • 1 and 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped walnuts
  • 1/2 cup crushed pineapple (optional, for extra moisture)

1. Prepare the Cake:

  • Preheat Oven and Prep Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Mix Dry Ingredients: In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Combine Wet Ingredients: In another large bowl, whisk together the oil, eggs, granulated sugar, brown sugar, and vanilla extract until well blended.
  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add Carrots and Walnuts: Fold in the grated carrots, chopped walnuts, and crushed pineapple (if using).
  • Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

2. Layering the Cake:

  • Frost Cake: Once the cakes are completely cool, frost the top of one cake layer, place the second layer on top, and then frost the top and sides of the assembled cake with Cream cheese frosting
  • Decorate: Sprinkle additional chopped walnuts on top for decoration if desired.


  • Carrot Preparation: For the best texture, use freshly grated carrots rather than pre-grated packaged carrots.
  • Frosting Consistency: If the frosting is too thick, you can thin it with a tablespoon of milk. If it’s too thin, add more powdered sugar to reach the desired consistency.
  • Storage: This cake can be stored in the refrigerator for up to 5 days. Let it come to room temperature before serving for the best flavor.
