Twist on Tradition : Healthy No Maida Marble Cookies

Ingredients:

  • 1 cup oat flour (you can grind rolled oats in a blender until fine)
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 2 tablespoons milk (or any plant-based milk for a vegan option)

Instructions:

Preparing the Dough:

  1. Mix Dry Ingredients:
    • In a medium bowl, whisk together oat flour, almond flour, baking powder, and salt. Set aside.
  2. Cream Butter and Sugar:
    • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Add Egg and Vanilla:
    • Beat in the egg and vanilla extract until thoroughly combined.
  4. Combine Wet and Dry Mixtures:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.

Creating the Marble Effect:

  1. Divide the Dough:
    • Remove about half of the dough from the bowl and set aside.
  2. Make Chocolate Dough:
    • To the remaining dough in the bowl, add cocoa powder and milk. Mix until the cocoa is fully incorporated and the dough is chocolatey.
  3. Marble the Doughs:
    • Take small pieces from each dough (vanilla and chocolate) and gently press them together in a random fashion. Roll slightly to form a marbled ball. Avoid overmixing to maintain the marble effect.

Baking the Cookies:

  1. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 350Ā°F (175Ā°C). Line a baking sheet with parchment paper.
  2. Shape the Cookies:
    • Use a cookie scoop or spoon to scoop out balls of marbled dough. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  3. Bake:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are just turning golden. The cookies will still be soft but will firm up as they cool.
  4. Cool:
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serving and Storage:

  • Store: Keep the cookies in an airtight container at room temperature for up to a week or freeze for up to a month.
