Three Chocolate Layer Mousse Cake Recipe

Ingredients:

For the Biscuit Base:

  • 1 1/2 cups digestive biscuit crumbs (or graham crackers)
  • 1/3 cup unsalted butter, melted

For the Dark Chocolate Mousse:

  • 200g dark chocolate (70% cocoa), chopped
  • 1 cup heavy cream
  • 1/4 cup milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon agar-agar powder

For the Milk Chocolate Mousse:

  • 200g milk chocolate, chopped
  • 1 cup heavy cream
  • 1/4 cup milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon agar-agar powder

For the White Chocolate Mousse:

  • 200g white chocolate, chopped
  • 1 cup heavy cream
  • 1/4 cup milk
  • 1 tablespoon granulated sugar
  • 1 teaspoon agar-agar powder

Instructions:

1. Prepare the Biscuit Base:

  • Combine biscuit crumbs and melted butter until well mixed.
  • Press the mixture into the bottom of a springform pan, creating an even layer.
  • Chill in the refrigerator for 30 minutes to set.

2. Make the Dark Chocolate Mousse:

  • In a small saucepan, mix milk, sugar, and agar-agar. Bring to a boil, then simmer for 2 minutes. Set aside.
  • Melt the dark chocolate over a double boiler or in the microwave.
  • Once melted, mix the chocolate with the agar-agar mixture.
  • Whip the heavy cream to soft peaks and gently fold into the chocolate mixture.
  • Pour over the biscuit base and return to the fridge to set for about 1 hour.

3. Make the Milk Chocolate Mousse:

  • Repeat the process used for the dark chocolate mousse, using milk chocolate.
  • Carefully pour over the set dark chocolate layer.
  • Chill again until set, about 1 hour.

4. Make the White Chocolate Mousse:

  • Repeat the process used for the previous layers, this time using white chocolate.
  • Pour over the set milk chocolate layer and smooth the top.
  • Chill the completed cake for at least 4 hours or overnight.

5. Serve:

  • Once set, carefully remove the cake from the springform pan.
  • Garnish with chocolate shavings, cocoa powder, or fresh berries before serving.

Tips:

  • Quality of Chocolate: Use good quality chocolate for each layer as it is the main flavor component.
  • Agar-Agar: Ensure the agar-agar is completely dissolved and mixed with the chocolate well to avoid any lumps.
  • Layering: Allow each layer to set completely before adding the next to prevent them from mixing.
