Eggless Cinnamon Rolls 

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk (plant-based milk works too)
  • 1/2 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon salt
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water (flax eggs)
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon

For the Icing:

  • 1 1/2 cups powdered sugar
  • 1/4 cup unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Flax Eggs:
    • In a small bowl, mix ground flaxseed with water and let it sit for 5-10 minutes until it becomes gel-like.
  1. Prepare the Dough:
    • In a large bowl, dissolve yeast in warm milk. Let it sit for about 5 minutes until it becomes frothy.
    • Add granulated sugar, melted butter, salt, flax eggs, and vanilla extract to the yeast mixture. Mix well.
    • Gradually add flour, one cup at a time, mixing until a soft dough forms.
    • Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
    • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
  1. Prepare the Filling:
    • In a small bowl, mix together brown sugar and ground cinnamon.
    • Roll out the dough on a floured surface into a 16×12 inch rectangle.
    • Spread the softened butter evenly over the dough.
    • Sprinkle the brown sugar and cinnamon mixture over the buttered dough.
  1. Roll and Cut the Dough:
    • Starting from the long edge, roll the dough tightly into a log.
    • Cut the log into 12 equal slices and place them in a greased 9×13 inch baking dish.
  1. Second Rise:
    • Cover the baking dish with a damp cloth and let the rolls rise for another 30-45 minutes until they double in size.
  1. Bake the Rolls:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Bake the rolls for 25-30 minutes or until they are golden brown.
  1. Prepare the Icing:
    • In a small bowl, whisk together powdered sugar, almond milk, and vanilla extract until smooth.
  1. Ice the Rolls:
    • Allow the rolls to cool slightly before drizzling the icing over the top.
    • Serve warm and enjoy your eggless cinnamon rolls!
