  • 1 cup (225g) unsalted butter, softened

  • 3/4 cup (165g) packed brown sugar
  • 1/4 cup (60ml) milk (any kind, dairy or non-dairy will do)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) chocolate chips (plus extra for topping)
  • Optional: 1/2 cup (50g) chopped nuts (walnuts, pecans, etc.)


  • 9-inch pie dish

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper for easy removal.
  2. Cream Butter and Sugars:
    • In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Milk and Vanilla:
    • Mix in the milk and vanilla extract until well combined.
  4. Combine Dry Ingredients:
    • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Mix Dry Ingredients into Wet Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Fold in Chocolate Chips and Nuts (if using):
    • Fold in the chocolate chips and optional nuts into the batter until evenly distributed.
  7. Transfer to Pie Dish:
    • Transfer the cookie dough to the prepared pie dish. Press down gently to spread it evenly. Sprinkle additional chocolate chips on top if desired.
  8. Bake:
    • Bake in the preheated oven for about 22-25 minutes or until the edges are golden brown and the center is set but still slightly soft.
  9. Cool and Serve:
    • Allow the cookie pie to cool in the pan on a wire rack for at least 20 minutes. This rest period helps it to set properly. Slice and serve warm or at room temperature. It pairs wonderfully with a scoop of ice cream or a dollop of whipped cream.
