Double Chocolate & Hazelnut Tart

Ingredients:

  • For the Crust:
    • 1 1/2 cups all-purpose flour
    • 1/4 cup cocoa powder
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, cold and cubed
    • 1 large egg yolk
    • 2 tablespoons ice water
  • For the Filling:
    • 1 cup heavy cream
    • 1/2 cup whole milk
    • 10 ounces dark chocolate, finely chopped
    • 1/4 cup granulated sugar
    • 1/4 teaspoon salt
    • 2 large eggs, lightly beaten
    • 1 teaspoon vanilla extract
    • 3/4 cup hazelnuts, toasted, skinned, and roughly chopped

Instructions:

  1. Prepare the Crust:
    • In a food processor, combine flour, cocoa powder, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
    • Add egg yolk and ice water. Pulse until dough just comes together.
    • Press the dough into a 9-inch tart pan with a removable bottom, making sure it is evenly spread on the bottom and up the sides.
    • Chill the crust in the refrigerator for at least 30 minutes.
  1. Bake the Crust:
    • Preheat the oven to 350Ā°F (175Ā°C).
    • Prick the crust with a fork, then bake for 15 minutes. Remove from oven and let cool while preparing the filling.
  1. Make the Filling:
    • In a saucepan, heat the cream and milk until it just begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until smooth and creamy.
    • Stir in sugar and salt, then mix in the beaten eggs and vanilla extract until well combined.
  1. Assemble the Tart:
    • Sprinkle chopped hazelnuts evenly over the cooled crust.
    • Pour the chocolate filling over the hazelnuts.
    • Return the tart to the oven and bake for 20-25 minutes, or until the filling is set but still slightly wobbly in the center.
  1. Cool and Serve:
    • Allow the tart to cool completely in the pan on a wire rack.
    • Once cooled, remove the tart from the pan and transfer to a serving plate.
    • Optionally, dust with powdered sugar or drizzle with more melted chocolate before serving.
