Hereā€™s a refreshing recipe for Eggless Key Lime Blondie Bars, blending the zesty flavor of key limes with the sweet, rich texture of blondies:

Ingredients:

For the Blondie Base:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup milk (or a non-dairy milk alternative)
  • 1 tbsp lime zest (preferably from key limes)
  • 2 tbsp key lime juice
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For the Key Lime Frosting:

  • 1/4 cup unsalted butter, softened
  • 1 tbsp key lime zest
  • 2 tbsp key lime juice
  • 1 1/2 cups powdered sugar
  • 1-2 tbsp milk or as needed (to achieve desired consistency)

Garnish:

  • Additional lime zest or thinly sliced lime rounds for decoration

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Line an 8×8 inch baking pan with parchment paper, letting the paper overhang on the sides for easy removal.
  2. Make the Blondie Base:
    • In a large bowl, whisk together the melted butter, light brown sugar, and granulated sugar until smooth.
    • Stir in the milk, lime zest, and key lime juice.
    • Sift together the flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  3. Bake:
    • Spread the batter evenly into the prepared pan.
    • Bake for 25-30 minutes, or until the top is set and the edges are lightly golden. A toothpick inserted into the center should come out with a few moist crumbs.
    • Remove from the oven and allow to cool completely in the pan on a wire rack.
  4. Prepare the Key Lime Frosting:
    • In a medium bowl, beat the softened butter until creamy.
    • Add the key lime zest and juice and mix until combined.
    • Gradually add the powdered sugar, half a cup at a time, beating until smooth. Adjust the consistency with milk as needed.
    • Spread the frosting over the cooled blondies.
  5. Garnish and Serve:
    • Sprinkle additional lime zest over the frosting or decorate with lime slices.
    • Allow the frosting to set before slicing into bars.
