Tiramisu Cookies

These Eggless Tiramisu Cookies combine the flavors of the classic Italian dessert into an easy-to-make, handheld treat. With layers of coffee, cocoa, and mascarpone cream, theyā€™re perfect for anyone craving the taste of tiramisu without the fuss of making a full dessert.

Ingredients:

For the Cookies:

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed espresso or strong coffee (cooled)

For the Mascarpone Filling:

  • 1/2 cup mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon heavy cream

For Assembly:

  • 1 tablespoon unsweetened cocoa powder (for dusting)
  • 1/4 cup brewed espresso or strong coffee (for brushing)

Instructions:

  1. Preheat the Oven and Prepare the Baking Sheet:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Line a baking sheet with parchment paper.
  1. Make the Cookie Dough:
    • In a medium bowl, whisk together the flour, baking soda, and salt.
    • In a separate large bowl, cream the softened butter and sugar together until light and fluffy.
    • Mix in the yogurt and vanilla extract until smooth.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Stir in the cooled brewed espresso or strong coffee until fully incorporated.
  1. Shape and Bake the Cookies:
    • Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Flatten each dough ball slightly with your hand or the back of a spoon.
    • Bake for 10-12 minutes or until the edges are lightly golden.
    • Remove the cookies from the oven and transfer them to a wire rack to cool completely.
  1. Prepare the Mascarpone Filling:
    • In a medium bowl, beat together the mascarpone cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy. Set aside.
  1. Assemble the Tiramisu Cookies:
    • Once the cookies have cooled, brush the tops with the brewed espresso or coffee for an authentic tiramisu flavor.
    • Spread a generous amount of the mascarpone filling on the bottom of one cookie, then top with another cookie to make a sandwich.
    • Repeat with the remaining cookies and filling.
  1. Dust with Cocoa Powder:
    • Dust the tops of the assembled cookies with unsweetened cocoa powder for the classic tiramisu look.
  1. Chill and Serve:
    • For the best flavor, refrigerate the cookies for at least 30 minutes before serving, allowing the coffee and mascarpone flavors to meld together.
