Hereā€™s a refreshing recipe for Strawberry Gelato ā€“ creamy, smooth, and full of fresh strawberry flavor!

Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 3/4 cup sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)

Instructions

1. Prepare the Strawberry Puree:

  1. Place the chopped strawberries in a blender or food processor, add the sugar, and blend until smooth.
  2. Pour the puree through a fine mesh sieve into a bowl to remove any seeds for a smoother texture.
  3. Stir in the lemon juice to enhance the strawberry flavor.

2. Prepare the Gelato Mixture:

  1. In a separate mixing bowl, combine the whole milk and heavy cream. Add the strawberry puree and vanilla extract (if using) and mix until well combined.
  2. Cover the bowl and refrigerate for at least 2 hours, or until the mixture is well chilled.

3. Churn the Gelato:

  1. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturerā€™s instructions, usually about 20-25 minutes, until it reaches a thick, creamy consistency.
  2. Transfer the gelato to a freezer-safe container, cover, and freeze for an additional 2-4 hours to firm up.

4. Serving:

  • Scoop and serve the Strawberry Gelato in bowls or cones. Garnish with fresh strawberries for a beautiful presentation.
