Ingredients:
For the Crust and Crumble:
- 1 1/2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 1 tsp vanilla extract
For the Raspberry Filling:
- 2 cups fresh raspberries (frozen can also be used, but thaw and drain well)
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- Juice of half a lemon
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350Ā°F (175Ā°C).
- Line a 9×9 inch baking pan with parchment paper, allowing some overhang for easy removal.
- Make the Crust and Crumble:
- In a large bowl, mix together the flour, oats, granulated sugar, brown sugar, baking powder, and salt.
- Add the cold cubed butter and vanilla extract. Using a pastry blender or your fingers, work the butter into the dry ingredients until the mixture is crumbly and resembles wet sand.
- Reserve about 1 cup of the crumble mixture for topping.
- Press the remaining mixture firmly into the bottom of the prepared pan to form a crust.
- Prepare the Raspberry Filling:
- In another bowl, combine the raspberries, sugar, cornstarch, and lemon juice. Gently toss until the raspberries are evenly coated and the mixture is combined.

- Evenly spread the raspberry filling over the crust.
- Sprinkle the reserved crumble mixture on top of the raspberry layer.
