Dissolve it in warm water with a pinch of sugar. If it bubbles and foams within 10 minutes, it’s good to go.

For non-GMO sugar, I use Wholesome Sweeteners. They have organic options too.

Urban Platter usually carry it, or you can find it online.

For chocolate, I swear by Valrhona. It’s pricey but worth it.
