Ingredients:

  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup milk (any kind, including non-dairy alternatives)
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven and Prepare Baking Sheets:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Line two baking sheets with parchment paper or silicone baking mats.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Mix until smooth.
    • Add the milk, vegetable oil, and vanilla extract. Stir well until all the ingredients are fully incorporated.
  3. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until the dough comes together. The dough should be thick and soft.
  5. Shape Cookies:
    • Roll the dough into 1-inch balls. You can use a small cookie scoop to help portion the dough evenly.
    • Roll each ball in granulated sugar if you desire a sweet, crunchy exterior.
    • Place the balls on the prepared baking sheets, spaced about 2 inches apart.
    • Flatten each ball slightly with the back of a fork, making a crisscross pattern.
  6. Bake:
    • Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers have set.
    • The cookies will puff up slightly during baking and flatten as they cool.
  7. Cool:
    • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
