Eggless Ice Cream Sandwiches: A Monsoon Treat

Ingredients:

For the Cookies:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened applesauce (egg substitute)
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (plant-based or regular)

For the Ice Cream:

  • 1 quart vegan vanilla ice cream (or your favorite flavor)

Instructions:

  1. Prepare the Cookies:
    • Preheat your oven to 350Ā°F (175Ā°C). Line a baking sheet with parchment paper.
    • In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
    • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the unsweetened applesauce and vanilla extract to the butter mixture, mixing well.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Add the milk and mix until the dough is smooth.
  1. Bake the Cookies:
    • Scoop dough onto the prepared baking sheet using a tablespoon or cookie scoop, spacing them about 2 inches apart.
    • Flatten the dough balls slightly with the back of a spoon or your hand.
    • Bake for 10-12 minutes, or until the edges are golden brown.
    • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  1. Assemble the Ice Cream Sandwiches:
    • Let the vegan ice cream soften at room temperature for a few minutes until it is easy to scoop.
    • Place a scoop of ice cream on the flat side of one cookie.
    • Top with another cookie, flat side down, pressing gently to spread the ice cream evenly to the edges.
    • Repeat with the remaining cookies and ice cream.
  1. Freeze the Sandwiches:
    • Wrap each ice cream sandwich individually in plastic wrap.
    • Place the wrapped sandwiches in a single layer on a baking sheet and freeze for at least 2 hours, or until firm.
  1. Serve and Enjoy:
    • Remove the ice cream sandwiches from the freezer a few minutes before serving to let them soften slightly.
