Date Walnut Cake

Hereā€™s a delightful recipe for Eggless Date Walnut Cake ā€“ moist, rich, and packed with the natural sweetness of dates and a nutty crunch from walnuts!

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup pitted dates (about 15-18 dates)
  • 1/2 cup milk (for soaking dates)
  • 1/4 cup milk (for the batter)
  • 1/4 cup vegetable oil
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Instructions

1. Prepare the Date Mixture:

  1. Soak the dates in 1/2 cup warm milk for 15-20 minutes until softened.
  2. Blend the soaked dates and milk together until smooth.

2. Prepare the Cake Batter:

  1. Preheat your oven to 350Ā°F (180Ā°C). Grease and line a loaf or round cake pan.
  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the blended date paste, 1/4 cup milk, vegetable oil, sugar, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet mixture, mixing until just combined. Avoid over-mixing.
  5. Fold in the chopped walnuts, reserving a few to sprinkle on top.

3. Bake the Cake:

  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Sprinkle the reserved walnuts on top for an extra crunch.
  3. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

4. Serving:

  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Slice, serve, and enjoy your Eggless Date Walnut Cake with a hot cup of tea or coffee!
