Choco Lava Cake Recipe

Ingredients:

  • 1/2 cup (115g) unsalted butter, plus more for greasing
  • 1 cup (175g) semi-sweet chocolate chips or chopped chocolate
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat Oven and Prepare Molds:
    • Preheat your oven to 425Ā°F (218Ā°C).
    • Grease four custard cups or ramekins with butter and lightly dust with cocoa powder or flour. Place these on a baking tray.
  2. Melt Chocolate and Butter:
    • In a medium heatproof bowl, combine the chocolate and butter. Melt over a pot of simmering water (double boiler) or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.
  3. Mix Eggs and Sugar:
    • In a separate bowl, whisk together the eggs, egg yolks, and sugar until the mixture becomes slightly thick and pale.
  4. Combine Ingredients:
    • Gradually fold the melted chocolate mixture into the egg mixture. Add vanilla extract and a pinch of salt. Sift the flour over the mixture and fold gently until just combined.
  5. Divide the Mixture:
    • Pour the batter into the prepared ramekins, filling them about three-quarters full.
  6. Bake:
    • Bake for about 12-14 minutes. The edges should be firm but the center should be soft and runny. Watch carefully to avoid overbaking as the soft center is crucial.
  7. Serve Immediately:
    • Let the cakes stand for about 1 minute after removing from the oven. Run a knife around the edges to loosen, then carefully invert onto serving plates. Serve immediately, ideally with a scoop of vanilla ice cream or a dusting of powdered sugar.
