Big Soft Ginger Cookies

Here’s a delicious recipe for Eggless Big Soft Ginger Cookies, perfect for those who love a spicy kick in their treats.

Ingredients:

For the Cookies:

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar, plus more for rolling
  • 1/4 cup molasses
  • 1/4 cup unsweetened applesauce (as an egg substitute)

For the Sugar Coating:

  • 1/4 cup granulated sugar

Instructions:

  1. Preheat the Oven and Prepare Pans:
    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large bowl, use an electric mixer to cream the softened butter and 1 cup sugar until light and fluffy.
  4. Add Molasses and Applesauce:
    • Mix in molasses and applesauce until well combined.
  5. Combine with Dry Ingredients:
    • Gradually stir the dry ingredients into the wet ingredients until the dough comes together. The dough should be thick and sticky.
  6. Shape and Sugar Coat:
    • Scoop out rounded tablespoonfuls of dough, and roll them into balls. Roll the balls in the extra 1/4 cup sugar to coat them completely. Place them on the prepared baking sheets, spacing about 2 inches apart.
  7. Bake:
    • Bake in the preheated oven for 8-10 minutes, or until the cookies just begin to puff up and crack on the surface but are still soft to the touch. Avoid overbaking to keep them soft.
  8. Cool:
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • For a stronger flavor, you can increase the amount of ginger or add a pinch of ground black pepper.
  • These cookies are great for making ahead as they stay soft and chewy for several days when stored in an airtight container.
