Atta Coffee Cookies

Hereā€™s a delicious recipe for Eggless Atta Coffee Cookies ā€“ a healthier twist with whole wheat flour and a hint of coffee for flavor!

Ingredients

  • 1 cup whole wheat flour (atta)
  • 1/4 cup powdered sugar
  • 1/4 cup brown sugar (for a richer flavor)
  • 1/4 cup melted butter or ghee (at room temperature)
  • 2 tablespoons milk (for binding, as needed)
  • 1 tablespoon instant coffee powder (adjust to taste)
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • A pinch of salt

Instructions

1. Prepare the Dough:

  1. In a mixing bowl, sift together whole wheat flour, baking powder, and salt.
  2. In a separate bowl, dissolve the instant coffee powder in 1 tablespoon of warm milk to form a smooth paste.
  3. Add powdered sugar, brown sugar, melted butter (or ghee), vanilla extract, and the coffee paste to the flour mixture. Mix well.
  4. Gradually add milk, as needed, to bring the dough together. The dough should be soft but not sticky.

2. Shape the Cookies:

  1. Preheat your oven to 350Ā°F (180Ā°C) and line a baking sheet with parchment paper.
  2. Divide the dough into small portions and shape them into round cookies. Flatten each cookie slightly with your hands or a fork.
  3. Optional: Make a small indent in the center for a decorative coffee bean or sprinkle a little coffee powder on top for extra flavor.

3. Bake the Cookies:

  1. Arrange the cookies on the prepared baking sheet, leaving some space between each.
  2. Bake for 12-15 minutes or until the edges turn golden brown.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

4. Serving:

  • Serve the Eggless Atta Coffee Cookies with a cup of hot coffee or tea for a cozy treat!

These cookies are slightly crispy on the outside and have a soft, chewy center with a lovely coffee aroma. Enjoy this guilt-free snack!
