Stuff Cookies

Hereā€™s a delightful recipe for Eggless Stuffed Cookies that are sure to be a hit with everyone. These cookies are soft and chewy on the outside with a surprise filling inside.

Ingredients:

For the Cookie Dough:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup yogurt (as an egg substitute)
  • 1 teaspoon vanilla extract

For the Filling:

  • Nutella, peanut butter, or any other creamy filling of your choice
  • Alternatively, you can use pre-made chocolate or caramel candies

Instructions:

  1. Prepare the Filling:
    • If using Nutella or peanut butter, scoop small teaspoon-sized amounts onto a baking sheet lined with parchment paper. Freeze until solid, about 1 hour.
    • If using candies, unwrap them and set aside.
  2. Make the Cookie Dough:
    • In a medium bowl, whisk together flour, baking soda, and salt.
    • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
    • Mix in the yogurt and vanilla extract until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Assemble the Cookies:
    • Take a large tablespoon of cookie dough and flatten it into a disc on your palm.
    • Place your choice of frozen filling in the center of the disc.
    • Enclose the filling with the dough, making sure it is completely covered, and roll it into a ball.
    • Repeat with the remaining dough and filling.
  4. Bake the Cookies:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Place the stuffed cookie dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
    • Bake for 10-12 minutes, or until the edges are just turning golden.
    • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips:

  • Chill the cookie dough for about 30 minutes before assembling if it’s too sticky to handle.
  • Ensure the fillings are well-frozen to prevent them from oozing out during baking.
  • You can experiment with various fillings to find your favorite combination!
