Ingredients
- 1 cup whole wheat flour (atta)
- 1/4 cup powdered sugar
- 1/4 cup brown sugar (for a richer flavor)
- 1/4 cup melted butter or ghee (at room temperature)
- 2 tablespoons milk (for binding, as needed)
- 1 tablespoon instant coffee powder (adjust to taste)
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- A pinch of salt
Instructions
1. Prepare the Dough:
- In a mixing bowl, sift together whole wheat flour, baking powder, and salt.
- In a separate bowl, dissolve the instant coffee powder in 1 tablespoon of warm milk to form a smooth paste.
- Add powdered sugar, brown sugar, melted butter (or ghee), vanilla extract, and the coffee paste to the flour mixture. Mix well.
- Gradually add milk, as needed, to bring the dough together. The dough should be soft but not sticky.
2. Shape the Cookies:
- Preheat your oven to 350Ā°F (180Ā°C) and line a baking sheet with parchment paper.
- Divide the dough into small portions and shape them into round cookies. Flatten each cookie slightly with your hands or a fork.
- Optional: Make a small indent in the center for a decorative coffee bean or sprinkle a little coffee powder on top for extra flavor.
