Date Walnut Cake

Ingredients
- 1 cup all-purpose flour
- 3/4 cup pitted dates (about 15-18 dates)
- 1/2 cup milk (for soaking dates)
- 1/4 cup milk (for the batter)
- 1/4 cup vegetable oil
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions
1. Prepare the Date Mixture:
- Soak the dates in 1/2 cup warm milk for 15-20 minutes until softened.
- Blend the soaked dates and milk together until smooth.
2. Prepare the Cake Batter:
- Preheat your oven to 350Ā°F (180Ā°C). Grease and line a loaf or round cake pan.
- In a mixing bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, mix the blended date paste, 1/4 cup milk, vegetable oil, sugar, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet mixture, mixing until just combined. Avoid over-mixing.
- Fold in the chopped walnuts, reserving a few to sprinkle on top.
3. Bake the Cake:
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle the reserved walnuts on top for an extra crunch.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
