Saffron and Pistachio Biscotti
Hereā€™s a delightful recipe for Eggless Saffron and Pistachio Biscotti, a unique twist on the classic Italian cookie that combines exotic saffron and crunchy pistachios for a truly decadent treat:

Ingredients:

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Flavoring Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp saffron threads, soaked in 1 tbsp warm milk
  • 1 tsp vanilla extract

Additional Ingredients:

  • 1 cup pistachios, coarsely chopped
  • Zest of 1 orange (optional for extra flavor)

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients:
    • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the saffron-infused milk and vanilla extract, mixing until well incorporated.
  4. Combine Dry and Wet Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
    • Fold in the chopped pistachios and orange zest (if using).
  5. Shape the Dough:
    • Divide the dough in half and form two logs, each approximately 12 inches long and 2 inches wide.
    • Place these on the prepared baking sheet, ensuring they are spaced well apart as they will spread.
  6. First Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the logs are light golden brown and firm to the touch.
    • Remove from the oven and let cool on the baking sheet for about 10 minutes.
  7. Slice and Second Bake:
    • Transfer the logs to a cutting board. Using a serrated knife, slice the logs diagonally into 1/2 inch thick slices.
    • Return the sliced biscotti, cut side down, to the baking sheet.
    • Bake for an additional 8-10 minutes on each side or until they are crisp and golden.
  8. Cool and Store:
    • Allow the biscotti to cool completely on a wire rack.
    • Store in an airtight container at room temperature.
