Oats Nankhatais

Here’s a delightful recipe for Eggless Oats Nankhatais, a twist on the traditional Indian shortbread cookies, using oats to add a nutritious touch:

Ingredients:

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats, finely ground into a flour
  • 1/2 cup powdered sugar
  • 1/2 tsp baking powder
  • A pinch of salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 tsp vanilla extract
  • 2 tbsp yogurt (to act as a binding agent)

For Garnishing:

  • Chopped nuts (almonds, pistachios, etc.) for topping
  • Cardamom powder (optional, for added flavor)

Instructions:

  1. Preheat Oven and Prepare Baking Tray:
    • Preheat your oven to 350Ā°F (180Ā°C).
    • Line a baking tray with parchment paper.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the all-purpose flour, ground oats, powdered sugar, baking powder, and a pinch of salt. If using, add cardamom powder at this stage for extra flavor.
  3. Incorporate Wet Ingredients:
    • Add the softened butter to the dry ingredients. Mix using your hands or a pastry cutter until the mixture resembles bread crumbs.
    • Stir in the vanilla extract and yogurt, and knead gently to form a soft dough. The dough should be firm but not sticky. If it’s too dry, add a little more yogurt, one teaspoon at a time.
  4. Shape the Nankhatais:
    • Take small portions of the dough and roll them into smooth balls. Slightly flatten each ball and place them on the prepared baking tray.
    • Press a few chopped nuts into the center of each cookie for garnish.
  5. Bake the Nankhatais:
    • Bake in the preheated oven for 15-20 minutes or until the edges start to turn golden brown.
    • Keep a close eye as these cookies can go from perfect to overdone quickly.
  6. Cool and Serve:
    • Remove the nankhatais from the oven and allow them to cool on the tray for 5 minutes. Then transfer them to a wire rack to cool completely.
    • They will harden as they cool, achieving the classic nankhatai texture.
