Hereā€™s a delicious recipe for Triple Chocolate Cheesecake Bars, which combine the richness of chocolate and the creamy texture of cheesecake for an indulgent treat:

Ingredients:

For the Crust:

  • 2 cups chocolate cookie crumbs (such as crushed Oreos)
  • 1/3 cup unsalted butter, melted

For the Cheesecake:

  • 2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup sour cream

For the Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

For the Chocolate Drizzle:

  • 1/4 cup dark chocolate chips, melted

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides to lift the bars out easily.
    • Combine the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan.
    • Bake for 8 minutes. Remove from oven and let cool while you prepare the filling.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
    • Beat in the eggs, one at a time, then stir in the vanilla extract.
    • Add the cocoa powder and sour cream, and mix until well combined.
    • Pour the cheesecake mixture over the cooled crust and smooth the top with a spatula.
  3. Bake the Cheesecake:
    • Bake for about 35-40 minutes, or until the center is just set.
    • Remove from the oven and cool completely in the pan on a wire rack.
  4. Prepare the Ganache:
    • Place the semi-sweet chocolate chips in a small bowl.
    • Heat the heavy cream in a small saucepan until it just begins to boil. Pour over the chocolate chips and let sit for 2 minutes, then stir until smooth.
    • Pour the ganache over the cooled cheesecake layer, spreading to cover completely.
  5. Add the Chocolate Drizzle:
    • Drizzle melted dark chocolate over the ganache for a decorative finish.
  6. Chill the Cheesecake Bars:
    • Refrigerate the bars for at least 4 hours or overnight to set completely.
  7. Serve:
    • Lift the bars out of the pan using the parchment paper overhang. Cut into squares.
    • Serve chilled for the best texture and flavor.
