Easy Carrot Sheet Cake Recipe with Cream Cheese Frosting

This Carrot Sheet Cake recipe is the perfect blend of sweet, moist, and spice-filled flavor, making it a delightful treat for any gathering or a cozy family dessert. Topped with a creamy cream cheese frosting, it brings classic carrot cake goodness in an easy-to-serve form.

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/4 cups vegetable oil
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar, packed
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

For the Cream Cheese Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions:

  1. Preheat the Oven and Prepare the Pan:
    • Preheat your oven to 350Ā°F (175Ā°C).
    • Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. Combine Dry Ingredients:
    • In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. Mix Wet Ingredients:
    • In a large bowl, whisk together the vegetable oil, granulated sugar, and brown sugar until well blended.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
    • Fold in the grated carrots, and if using, the walnuts and raisins.
  5. Bake the Cake:
    • Pour the batter into the prepared baking pan.
    • Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Remove from the oven and allow to cool completely in the pan on a wire rack.
  6. Prepare the Frosting:
    • In a large bowl, beat together the softened butter and cream cheese until smooth and creamy.
    • Gradually add the powdered sugar, about 1 cup at a time, beating well after each addition.
    • Stir in the vanilla extract and beat until the frosting is smooth and spreadable.
  7. Frost the Cake:
    • Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
  8. Serve:
    • Cut the cake into squares and serve.
    • Store any leftovers in the refrigerator.
